Wild Fennel Seeds – This variety, also known as “Finocchio Selvatico” or “Finocchio” in Italian, is grown for its leaves, pollen, and seeds; it does not form bulbs. The wild fennel plant features delicate fronds often used for flavoring fish and soups. Its pollen, sourced from the beautiful yellow fennel flowers, is a prized delicacy known for its intense flavor. The seeds, produced in abundance, have a strong fragrance and clean taste, making them a staple in fennel sausage recipes and a hallmark of fennel from Italy. Additionally, the vibrant yellow fennel flowers are perfect for cutting. This wild fennel variety grows to 30–40 inches high and matures in approximately 75 days.
